Half Coated Dark Chocolate Biscuits with Pistachio Nuts Recipe

Hey everyone! I hope you all had a lovely Valentine's Day weekend! Mine was very relaxed and seemed to revolve around food a lot.. We made cookies, went to Nando's, and also made heart shaped mini pizzas XD 


Today I'm going to share with you a recipe which kept going sooo wrong but it turned out okay in the end XDIt's a bit more of a difficult dough to work with as you have to knead it for ages and I'm really impatient but they turned out really tasty. I'd maybe recommend adding some milk or something if it does seem too dry but it does eventually get there. Likewise the recipe for my lemon shortbread cookies would also work nicely if you wanted an easier option. I then slightly overdid the first batch and then I roasted already roasted pistachios because I'm an idiot so they burnt and went in the bin haha! In the end though they were really good and we ate them all :')



Ingredients: Makes 20


175g plain flour
100g butter
100g caster sugar
pinch of salt
1tsp vanilla essence
Hazelnuts or pistachios or other nuts
1 bar dark chocolate

Method:

  1. Preheat oven to 180C/Gas Mark 4.
  2. Sift the flour, add the salt, sugar, butter and vanilla essence and rub with fingertips to form breadcrumbs.
  3. Keep going until you form a dough. Knead on a lightly floured surface until the dough is smooth.
  4. Wrap in oiled cling film and chill for 15 minutes.
  5. Roll out until around 6mm thick and cut out your shapes.
  6. Bake for 15-20 minutes or until golden brown and leave to cool.
  7. Roast your nuts for 15-20 minutes if not already roasted and then coarsely chop.
  8. Melt the chocolate. Dip half the biscuit into the chocolate and add the nuts.
  9. Leave on greaseproof paper until the chocolate has set.
  10. Enjoy! :)

I hope you enjoyed this post. Despite throwing a tantrum I would probably make these again haha! The biscuit has more of a crunch to it rather than melting in your mouth but it goes nicely with the chocolate and they were all demolished by the next day haha :)

  7. These look amazing and I'm always a fan when so much butter is involved in a recipe. And the addition of pistachios is perfect. I remember being obsessed with them when I first discovered them in elementary school. A game changer!
