Graduation Cupcakes

Graduation cupcakes chocolate white icing frosting buttercream recipe

Hey everyone! Hope you're all well! Today I wanted to share a baking recipe with you. I shared this cupcake recipe around Christmas however I wanted to change it a little bit and do something graduation themed. I decided to keep the cupcake base the same but I decided to go for a vanilla buttercream frosting on top with a little graduation cap. I had plenty of icing left over so you could make less or you could go crazy and add more icing :)


Ingredients: Makes 12 cupcakes

Cupcake:

125g unsalted butter
100g caster sugar
2 eggs
125g self raising flour
2tbsp milk
1/2 tsp vanilla essence
100g white chocolate chips

Icing:

150g unsalted butter
250g icing sugar
3-4 tbsp milk
Drizzle of vanilla essence

Graduation Caps:

Chocolate bar (we want square pieces)
Rolos (or Reece's pieces)
Strawberry laces

Method:

  1. Preheat oven to 180C, Gas Mark 4 and like a muffin tin with 12 cupcake cases.
  2. Whisk the butter and sugar together until light and fluffy.
  3. Gradually add in the eggs. Add the flour, cocoa powder, milk, vanilla essence and mix before adding in the chocolate chips.
  4. Split between the cupcake cases and bake for 12-15 minutes and once baked leave to cool completely.
  5. For the icing whisk together the butter and sugar and then add the vanilla and milk until you have your desired consistency and pipe onto the cupcakes.
  6. To make the hats put a little bit of icing on a Rolo and stick it to the chocolate square. Put a little bit of icing on the strawberry lace and stick it on top. Then place the cap onto the cupcake
  7. Enjoy! :)

Add the milk, vanilla essence and white chocolate chips


Bake for 12-15 minutes at 180C

To make the icing whisk together the butter, icing sugar, milk and vanilla essence


Make the little graduation hats and put them on top of your iced cupcakes
