Mini Egg Rocky Road Recipe

Easter Rocky Road recipe mini egg creme egg

Hey everyone! Hope you're all well! I had a lovely weekend and saw quite a few of my friends which was nice! Today, my best friends and I went to Windsor for Afternoon Tea which was good fun and we chatted for hours with our full bellies :) Lab work is going well although I'm quite tired now so I'm looking forward to my week off over Easter!

Today I thought I would share with you this Rocky Road recipe from Nigella Lawson where I added some mini eggs and creme eggs to make it perfect for Easter. I really like it and I will probably make it again to take into work XD

Ingredients:

300g dark chocolate
125g butter
3tbsp golden syrup
200g biscuits
100g mini marshmallows
mini eggs
creme eggs

Method:

  1. Melt the butter, chocolate and golden syrup.
  2. Crush the biscuits.
  3. Add most of the melted chocolate mixture to the biscuits leaving a bit to pour on top.
  4. Add the rest of the ingredients and mix well.
  5. Pour into a dish. Add the remainder of the chocolate and add your decorations.
  6. Refrigerate for a few hours and enjoy! :)
