Dark and White Chocolate Chip Cupcake Recipe

Dark and White Chocolate Cupcakes Easy Christmas

Hey everyone! This weekend one of my close friends came round and we decided to do some Christmas baking, After spending forever on Pinterest I thought we could just make some cupcakes that I knew were good and then decorate them all christmassy ish XD Obviously everything had to go wrong haha! First one of my eggs was off so it spoiled the other one and I had to borrow 2 eggs from the neighbours, I didn't have a muffin tin, so it was too shallow and the cupcakes spread open. Then when I was taking the cupcakes out of the oven I squished 2 with the oven gloves :') Then my electric mixer broke.. and then when I was trying to pipe the bag split so we did it with a knife :') They still turned out really tasty in the end though XD


Ingredients: Makes 12


For the Cupcakes:
125g butter, softened
100g caster sugar
2 eggs, lightly beaten
125g self raising flour
2tbsp cocoa powder
100g white chocolate chips
2tbsp milk
1/2 tsp vanilla essence

For the Icing:
225g icing sugar
3tbsp cocoa powder
25g butter, melted
4-5tbsp milk

Method:

  1. Preheat oven to 180C/Gas Mark 4 and line a muffin tin with cupcake cases.
  2. Beat the butter and sugar together until light and creamy then gradually whisk in the eggs. 
  3. Sift the flour and cocoa together and fold into the butter mixture with white chocolate chips, milk and vanilla essence.
  4. Spoon the mixture evenly into the cases and bake for 12-15 minutes or until the cakes are firm to the touch.
  5. Leave to cool completely before icing.
  6. For the icing: sift the icing sugar and cocoa into a bowl, stir in the butter and enough milk to make a creamy consistency.
  7. Ice and decorate and then enjoy! :)

Whisk together the butter and sugar until light and fluffy

Add the eggs

We added the vanilla essense and milk now

Sift together the flour and cocoa powder

Combine everything together

Add the white chocolate chips and mix with a spoon


Spoon the mixture evenly into 12 cases

Bake for 12-15 mins or until firm to touch (we did 25 as my oven is stupid XD)

Make the icing

Grey Faux Suede Coats

Grey Suede Shearling Coat Oversized New Look

Hey everyone! Hope you're all well :) I've had a good week at labs, my experiments have been going well and so hopefully I should be getting some big results to this section of work which will be quite cool! I recently bought this grey coat and thought I would show it on the blog. Luckily it wasn't raining yesterday although it was sooo windy so there was a lot of crazy hair flying around haha and all the hair holding!






I actually picked up this coat in the teens sale :') It's age 12-13 but it's more of an oversized fit and I come under that height bracket.. I know haha :') and it was only £24! I saw the camel version when I was shopping a while back and liked it so when I saw the grey on offer I decided to get it. The inside is crazy soft, it's like wearing a blanket so I thought it would be nice as an everyday jacket, although it leaves a lot of fluff everywhere! :)

I decided to keep the rest of my outfit super simple so I went for my favourite black skinny jeans from H&M, a black roll-neck top and my black boots from Dorothy Perkins. Jewellery wise I decided to layer two necklaces as I thought it looked nice. I really like the shorter necklace but I find it hard to style but I thought it looked quite cute with the slightly longer one :)

I also bought a new lipstick recently and I quite like it! It's very different as I never wear lipstick and went for a very bold colour. It's from Primark and it's their velvet matte lipstick crayon in Wine and it was £2, I wasn't sure if I'd like it or if I'd wear it so I got a cheap one so maybe I'll get some better ones soon :)

The Old Vine, Winchester

Hey everyone! Hope you're all well! On Thursday a group of us from work had our Christmas Meal at The Old Vine in Winchester and it was really lovely so I thought I would share some pictures :)

I'm not going to lie.. my expectations were realllly low. I've heard that the food there is really good but when I looked at the options on the set menu there wasn't really anything that stood out to me. I thought all the options were a bit funny and they didn't have like.. Turkey with all the trimmings which I thought was a bit weird.. and there was a set price of £25 per person so I wasn't sure whether it would be worth it. Luckily I was pleasantly surprised!

When we arrived we were promptly taken to a separate room where we had our table for 14. It was such a lovely room and it was really nice that we were separate and I felt that we could enjoy it a bit more. There were also some really lovely decorations and the room looked so cute! Due there being so many of us we also received 2 complimentary bottles of Prosecco between us all. :)



For my starter I chose the smoked salmon and it came with a lovely mustard, honey and dill dip, salad and a selection of bread, it was really tasty and the portion was actually pretty big! A lot of people opted for the scotch egg which did look really good.. It was a perfectly runny egg surrounded in sausage meat and a nice salad.

For my meal I picked lamb shank in red wine sauce with mash potato, sweet potato and green beans. I really enjoyed my main and I think it was one of the better options. It was also huge so I couldn't finish it all, but it was really tasty! Those that had the crab main didn't really like it which is such a shame.



Finally, for dessert I picked an apple tart and I think it was my favourite part! It was warm and sweet and it was really lovely. There was ice cream on top which I wasn't too keen on so I took it off but the actual tart was really nice :)


After the meal we had a choice of different teas and coffee, so I picked a camomile tea and we all opened our secret santa presents. It was actually a really nice evening and I'm glad it went well and I liked the food! Have you had any Christmas meals yet? :)
